François Rousset-Martin farms in the Jura and takes great pride in the region's singular wine traditions, of which Macvin du Jura is among the rarest specialties. This bottling is produced from unfermented Jura grape must (labeled by his importer under both Chardonnay and Savagnin bottlings) blended with marc de Jura, a neutral grape spirit distilled from local pomace, and then aged for five years in barrel.
