Profile & Story

Cyril Brisson is the fourth generation of his family to run Domaine Gilles Brisson, farming in the prized Grande Champagne zone just south of the town of Cognac; he took over from his father in 1989, and his sons Alexis and Loan have since joined him. The estate was the first in Cognac to receive HVE 3, the highest level of that environmental certification, and only the coeur de chauffe — the finest cut of the distillation — is used in the family's Cognacs. This Pineau des Charentes is a blend of 40% Colombard, 40% Folle Blanche, and 20% Sémillon, made in the traditional style by blending unfermented grape juice with Cognac and aging the two together for 18 months in oak barrels.

Tasting Notes

Bright and lightly amber in color, this Pineau des Charentes shows a delicate nose of crystallized fruit with walnut, almond, and plum, leading to a soft, silky palate with a lingering floral persistence.

Pairing Recommendation

It pairs well with melon, white meat or fish, and a pineapple tart or fresh fruit cocktail for dessert.
