Profile & Story
Valdespino is one of the oldest sherry houses in Jerez, with commercial records tracing back to the fifteenth century and formal incorporation as a company in 1875; the family-founded house is now part of Grupo Estévez, which acquired it in 1999. El Candado ("the padlock," a reference to the small padlock on its neck label) is Valdespino's Pedro Ximénez, made from grapes that are picked fully ripe and then sun-dried into raisins before pressing, with the resulting must aged for years in the solera system to concentrate its natural sweetness.
Tasting Notes
El Candado shows an intense mahogany color with deep aromas of dried fruit — figs and raisins — alongside subtle notes of chocolate and coffee. The palate is very smooth, with an intense, unctuous and fruity mid-palate carrying through to a long finish.
