Weingut Schlossmühlenhof farms 20 hectares on the slopes above Kettenheim in the Rheinhessen; the estate has been in the Michel family for six generations since 1846, originally a rye-and-wheat mill before switching to vines in the 1920s, and is farmed with an "ecologically healthy" approach. For Boden Funk, the Müller-Thurgau skins stay in contact with the juice for about eight hours, adding tannin and edge; fermentation proceeds with ambient yeasts and the wine ages five months in stainless steel, unfined and unfiltered.
