Profile & Story

Swick Wines is Joe Swick's natural-wine project, working with organic vineyards across Oregon and Washington. This Cabernet Sauvignon is 100% from Washington's Columbia Valley — 75% Konnowac Vineyard in the Rattlesnake Hills AVA (organic, roughly 30-year-old vines) and 25% Conley Vineyard in the Yakima Valley. It's fermented 100% whole-cluster for 45 days on the skins with native yeast only, then aged 18 months split between 2,000-liter oval oak casks and neutral French barrels, with no fining, no filtration and minimal sulfur.

Tasting Notes

Black cherry, cassis, subtle cedar and baking spice on the nose; structured tannins and balanced acidity carry plum, dark berry and gentle earthy undertones on the palate.

Pairing Recommendation

Grilled or roasted red meats, braised lamb, aged cheeses, and mushroom dishes — best served slightly below room temperature (60–65°F).
