Profile & Story

Daishichi Shuzo is a historic sake brewery in Nihonmatsu, Fukushima Prefecture, renowned as the standard-bearer of the traditional, labor-intensive kimoto brewing method. Masakura Junmai Ginjo Kimoto was developed as a top-down expression of Daishichi's flagship kimoto quality stepped down to ginjo level, giving it its own individual character rather than simply being a lower grade of an existing product. It is brewed from Gohyakumangoku rice polished to a 58% "superflat" rice polishing ratio, using rice and koji that are 100% domestic. Alcohol content is 15%.

Tasting Notes

While fundamentally a ginjo, Masakura carries the richness and maturity typical of junmai made with the kimoto method. It can be enjoyed a wide range of ways, from chilled (12-15C) to gently warmed, with a gentle sweetness that pairs well with creamy, rich dishes.

Pairing Recommendation

Appetizers: steamed shrimp dumplings and dim sum such as xiaolongbao, raw oysters. Main dishes: tempura of seasonal ingredients, seafood risotto.
