Profile & Story

Kamoizumi Brewing Company, based in Saijo, Hiroshima, became one of a pioneering group of eleven breweries to commit to junmai (no added alcohol) sake production in 1973. "Summer Snow" is a deluxe, coarsely filtered nigori made from Hiroshima Yamadanishiki and Nakate Shinsenbon rice polished to 70%, using Hiroshima yeast 125. It is bottled undiluted and unpasteurized (nama) for a fresh, straight-from-the-vat character. ABV 18%, acidity 1.7, SMV +1.0.

Tasting Notes

Rich, creamy, and full of natural flavor - mildly sweet yet surprisingly robust. Nose of fresh-cut hay and grapes; the palate delivers a gentle viscosity with melon and cotton candy flavors settling into a dry, subtle finish; visually resembles a snow globe.

Pairing Recommendation

Pairs well with richly flavored Thai, Vietnamese, and Cuban dishes, even short ribs; also good with cheese, pasta, and spicy fare. Keep refrigerated and serve chilled.
