Profile & Story

Kamoizumi Brewing Company is located in Saijo, Hiroshima Prefecture - one of Japan's three great sake-brewing regions, prized for its water quality, cold brewing climate, and skilled seasonal workers. Yamabuki is brewed old-school without charcoal filtration and aged for two years at ambient temperature in earthenware storehouses, which gives the sake its lovely amber ("yamabuki"/golden) tint. Made from Hiroshima Hattan and Nakate Shinsenbon rice varieties with Hiroshima yeast 125, polished to 58%. ABV 15%, acidity 1.6, SMV +1.0.

Tasting Notes

Rich in flavor, with notes of caramel and shiitake mushroom; a generous, layered palate with a smooth, rounded texture.

Pairing Recommendation

Good with duck and pork, kabocha, mushrooms of all kinds, and root vegetables; goes well with Chinese cuisine.
