Profile & Story

Kikuhime Shuzo is a brewery in Hakusan, Ishikawa Prefecture, known for controlling every step of production in-house, including its own rice polishing. Kinken ("Golden Sword") takes its name from the ancient Kinkengu shrine that Kikuhime visits at the start of every brewing season. It is made from top-grade AAA Yamada Nishiki rice from the Yokowa area, milled to 65%, using medium-hard Hakusan underground well water. The sake is a blend of junmai sake aged in horo tank (ceramic-lined steel tank) at low temperatures for 1-2 years. ABV 15.5%, SMV -4, acidity 1.6.

Tasting Notes

A soft sake with complex flavors of honeycomb, pear, cream, roasted almonds and nougat, with softer aromas of pear blossom emerging as the sake opens in the glass.
