Profile & Story

Nagurayama Brewing Company is located in the Aizu region of Fukushima Prefecture, one of Japan's oldest and most storied sake-brewing centers, and has produced ginjo-grade sake since 1973; the brewery has been a leading contributor to Fukushima's record run of gold medals at Japan's National Sake Appraisal. This "Aizu Jirushi" bottling is a Futsushu (everyday-grade) sake made from standard sake-brewing rice polished to 70%, fermented with Association No. 9 yeast via the sokujo method, reaching about 15% ABV.

Tasting Notes

Light and primly poised with a touch of elegance, this well-balanced, easy-drinking sake carries a gentle sweetness (SMV -1.0, acidity 1.2) that unfolds into layered umami on the palate, finishing clean and approachable.

Pairing Recommendation

Best served chilled alongside izakaya classics such as grilled ika, agedashi tofu, daikon salad, or katsuo (bonito) tataki.
