Profile & Story

Nishida Brewing Company, the only sake brewery in Aomori City, was revitalized in 1955 when Kotaro Nishida took over and focused on making the best sake possible from local Hanafubuki rice, at a time when most local drinkers still preferred sake from the larger Nada and Fushimi breweries to the south. "Denshu" (roughly, "rice-field sake") later gained national fame when readers of the Nihon Keizai Shimbun (Japan's Wall Street Journal) voted it the country's best junmai sake. This Tokubetsu Junmai is milled to 55% and fermented with Association No. 9 yeast via the sokujo method, reaching 15-16% ABV.

Tasting Notes

Smooth and easy to drink, with sweetness and umami in near-perfect balance (SMV ±0, acidity 1.5) and an easy finish.

Pairing Recommendation

Excellent with hearty, simply prepared foods such as charcoal-grilled fish and steak, stews, and cold-weather comfort food; a versatile companion to izakaya fare. Best served cold.
