Profile & Story

Sanyohai Shuzo, founded in 1837 in the mountains of western Hyogo Prefecture, is now run by seventh-generation brewer Yuichi Tsubosaka, who since 2015 has sharpened the estate's focus on its "Banshu Ikkon" line. This Junmai is made from locally grown Kita Nishiki rice -- a variety with a firmer grain more typical of rice grown farther north -- milled to 60% and fermented with Kyokai (Association) No. 901 yeast using soft Hyonosen mountain water, reaching 15% ABV.

Tasting Notes

A beautifully lean, structured sake: light-bodied and linear, with aromas of green apple giving way to a creamy body with silken textures, resolving in the brand's signature bright, spicy, dry finish (SMV +10, acidity 1.7).

Pairing Recommendation

Pairs well with soy-flavored dishes, marinated raw tuna, sea bream carpaccio, or in-season fresh tomatoes.
