Profile & Story

Seitoku Meijo was founded in Gunma Prefecture in 1959 through the joint operation of four local breweries, taking its name from Prince Shotoku's principle of "cherish the harmony among people." The brewery's Daiginjo is made under brewmaster Yoshihiko Nishioka, who trained under Chieko Kumagai at Japan's National Research Institute of Brewing, and has been a perennial gold-medal winner at Japan's National Sake Appraisal in Hiroshima; by 2019 it had also won gold for ten consecutive years at the U.S. National Sake Appraisal. It is brewed from Yamadanishiki rice polished to 38%, fermented with Association No. 1801 and Gunma G2 yeasts via the sokujo method, reaching 15-16% ABV.

Tasting Notes

A soft floral aroma yields to lychee fruit, but what stands out most is the sake's exquisite balance and finesse (SMV +2.0, acidity 1.0).

Pairing Recommendation

Best served cold, straight from the refrigerator; pairs well with simple, natural flavors from mountain and sea.
