Profile & Story

Sohomare Sake Brewery, established by the Kono family in 1872 in Tochigi Prefecture, is known for rich, expressive flavor and genteel clarity and balance. Unusually, Sohomare uses "Designation A" Yamadanishiki rice -- normally reserved for daiginjo-class sake -- even in this Tokubetsu Junmai "Karakuchi" (dry) label, polished to 60% and fermented with a blend of Association No. 6, 7, 9, and 1401 yeasts via the sokujo method, reaching about 15% ABV.

Tasting Notes

A masterful take on the "dry sake" genre: clean and bracingly delicious, with the flavor, body, and structure expected of a premium junmai. SMV +5.0 and acidity 1.8 give it a crisp, assertive dryness.

Pairing Recommendation

Delicious served cold or warmed; pairs well with sushi thanks to its dryness, and equally at home with fish and poultry entrees.
