Profile & Story
Tenzan Sake Brewery, founded in 1875 by Toshizo Shichida and his wife Tsuki, is a family brewery in Saga Prefecture now led by the 6th generation of the Shichida family. Shichida Junmai is the brewery's best-selling standard product, made from Yamadanishiki and Reihou rice milled to a 65% polishing rate. Alcohol content 17%. It won the Medaille de Platine at Kura Master 2017 (Top 10 brands).
Tasting Notes
An all-round Junmaishu with a light taste and the umami of rice; well-balanced flavor that goes well with a variety of dishes. Can be enjoyed cool (10-15C) or warmed (38-42C).
Pairing Recommendation
Boiled daikon (mooli) and minced chicken with a starchy sauce; stewed pork.
