Bodegas Alto Moncayo is a winery in Spain's Campo de Borja Denominación de Origen, founded in 2002 with the goal of establishing itself as a world reference for high-quality Garnacha wines made from native vine clones. Veratón embodies this ambition, combining modern winemaking with vibrant freshness. It is produced entirely from Garnacha vines between 30 and 50 years old, grown at elevations ranging from around 550 meters in the Borja area up to 850 meters in Tabuenca, where soils vary from red clay mixed with sandstone in Tabuenca to gravel and rounded stones (caillous) at the lower Borja elevations. The vines are trained in the traditional bush (vaso) system and undergo vigorous canopy management and green harvest during ripening. In the winery, only the most perfectly mature bunches are hand-selected in the vineyard and harvested into small boxes to prevent crushing, then sorted on triage tables before fermentation in small 7-to-8-ton stainless steel tanks; the must is gently basket-pressed. The wine is then aged for 16 months in American and French oak barrels, 80% new and 20% second-use.
