Profile & Story

Kellerei Terlan (Cantina Terlano) farms vines in Alto Adige, South Tyrol, in Italy's far north, a region wedged between the Alpine north and the Mediterranean south where vines grow on varied soils and climate zones between 200 and 1,000 meters above sea level; roughly 60 percent of the area's vineyards are planted to white varieties. As winemaker Rudi Kofler puts it, Pinot Bianco has always been one of the winery's most important wines, giving powerful, mineral expression to the terroir in which the grapes ripen, and the variety is considered a hallmark of the house. The Tradition Pinot Bianco is grown at 350 to 900 meters on south- to southwest-facing slopes of 5 to 70 percent gradient, with a yield of 63 hectoliters per hectare, from 100% Pinot Bianco. The grapes are harvested and selected by hand, gently pressed, and the must is clarified through natural sedimentation before a slow, temperature-controlled fermentation in stainless steel; the wine is then aged on its lees in steel for six to seven months, reaching 13% alcohol with 1.6 g/l residual sugar and 5.9 g/l total acidity.

Tasting Notes

The wine pours a clear, pale yellow with a slight greenish shimmer. The nose offers crisp notes of apple and pear mingling with raspberry and lime, rounded off by a touch of camomile and lemongrass. On the palate, pear and quince fruit combine with a salty minerality; the wine has good body and balance, a lively tingle on the tongue, and a persistent aftertaste.

Pairing Recommendation

The producer recommends it with salmon or tuna carpaccio, courgette flowers with stracchino cheese or burrata, avocado salad, regional dishes such as spinach spätzle or schlutzkrapfen, spaghetti alla carbonara, scallops au gratin, and grilled scampi, dentex, or sea bream, served at 10-12°C.
