Profile & Story

Zardetto's story traces back to 1917, when family progenitor Bepi Zardetto began cultivating vines in the Conegliano area of northeastern Italy. His son Ernesto earned a bronze medal for the family's bottled wine in 1936, the first appearance of the Zardetto name on a label, and grandson Pino Zardetto later formalized the family workshop into a company in 1969, going on to serve as an international ambassador for Prosecco. Fabio Zardetto expanded the winery's focus on sparkling wine production from the 1980s onward. The estate draws on the varied and complex mosaic of hills nestled between the Alps and the Adriatic Sea that defines the Conegliano Valdobbiadene zone, and has been recognized for consistency, with Robert Parker's Wine Advocate awarding scores of 91+ points over a decade and critic Monica Larner naming Zardetto 'the winery of reference in the sub-area of Conegliano.' The Prosecco Superiore Extra Dry DOCG is made entirely from grapes grown in high hillside vineyards within the historic Conegliano Valdobbiadene DOCG area. The grapes are hand-harvested and undergo temperature-controlled fermentation in stainless steel tanks, with secondary fermentation carried out in pressurized stainless steel tanks at 58-60°F for about 45 days; once the wine reaches six atmospheres of pressure it is cooled to 28°F and rested a further 60 days before bottling.

Tasting Notes

The wine shows a golden straw-yellow color with hints of green, and a rich, fine and persistent perlage. The nose is fresh, intense and floral, with notes of acacia and wisteria blossom alongside rennet apple and white peach. On the palate it is sapid and round, its freshness balancing the ripeness of the fruit; typical golden apple flavors and a hint of citrus are supported by a rich minerality within a complex, tightly structured frame, finishing with refined, persistent bubbles.

This Prosecco Superiore is excellent enjoyed on its own or paired with appetizers, fish, and white meat dishes.
