Bodegas Cesar Florido has been bottling sherry in the coastal town of Chipiona since 1887 and remains one of the oldest bodegas in the appellation, currently run by the fifth generation of the Florido family from a solera housed just 50 meters from the Atlantic. This Amontillado is made from 100% Palomino Fino grapes grown on old vines in the Pago Miraflores, reaching 17.5% alcohol. Its aging is biological at first, developing under a veil of flor, and turns oxidative over the years, an evolution shaped by the solera's close proximity to the ocean.

Tasting Notes

An elegant amber-colored wine with a delicate nose dominated by dried fruit, hazelnut and walnut, and wine-soaked wood. The palate carries the same nutty richness alongside a distinct saline note drawn from the sea air around the bodega.

Pairing Recommendation

The bodega recommends it with soups and consomme, white meats, oily fish such as tuna, mushrooms, and semi-cured cheeses; it is also widely used in fine dining.
