Jacky Blot founded Domaine de la Taille aux Loups in 1988, acquiring the estate in 1992, and built it into one of the leading names in Montlouis-sur-Loire and Vouvray, farming old, low-yielding Chenin Blanc vines organically along the Loire and Cher. Brut Tradition is made from 100% Chenin Blanc from vines over 40 years old, certified organic, using the traditional method with ambient-yeast fermentation, no malolactic conversion, and aging in 9-10-year-old barrels; the wine is finished with a low dosage of 3g/L.
