Profile & Story

Barbadillo is a historic Sanlucar de Barrameda bodega founded in 1821, one of the largest family-owned houses in Jerez. 'La Cilla' is their Pedro Ximenez, aged through the solera system, made 100% from sun-dried Pedro Ximenez grapes to concentrate natural sugars.

Tasting Notes

Deep mahogany color with raisin, fig, and molasses richness; unctuous and lusciously sweet with a long, treacle finish. (Style-typical PX descriptor.)

Pairing Recommendation

Traditionally paired with desserts, and in Spanish cooking with Iberian pork stews finished with bitter orange.
