Profile & Story

Isabelle and Thierry Daulhiac have farmed a 19th-century manor and 15 hillside hectares at Razac-de-Saussignac, between the Monbazillac and Sainte-Foy appellations, since 1992, moving gradually to organic and near-biodynamic practice (their estate is Chateau le Payral). Bise is an orange-wine field blend given extended skin contact; the cuvee was created during the pandemic, named for the 'Bise' wind that was oddly prohibited at the time, and carries a whimsical label collaged by illustrator Isabelle Lacombe. ABV approx. 12.5%.

Tasting Notes

Golden color from extended skin contact, with dried apricot, crisp apple and honeyed nuts over earthy mineral tones; textured, gently gripping tannins and a persistent finish.

Charcuterie, a cheese plate, or apricot/orange/nectarine-based sweet-savory dishes.
