Château de Saint Cosme is the leading estate of Gigondas, in the Barruol family since 1490 across fourteen generations of vignerons, with Gallo-Roman fermentation vats still preserved on the property. Wines labeled simply "Saint Cosme," without the "Château de," are negociant bottlings from contracted growers rather than the estate's own vines. This Côtes-du-Rhône is 100% Syrah from the stony Villafranchian terraces of the Gard, partially destemmed, fermented with natural yeasts and vinified in concrete vats.

Grilled or smoked meat, dishes featuring herbs, roasted mushrooms and onions -- seared venison or beef with black pepper and thyme, or a Moroccan tagine of pigeon or chicken.
