The Dauny family has grown vines on the hillsides of Champtin in Sancerre since 1683, converting the estate fully to organic farming in 1964 -- decades before most of the appellation. Today the domaine is run by thirteenth-generation brothers Benoit and Thibaut Dauny. Les Caillottes takes its name from the shallow, pebbly limestone soil that gives Sancerre its most direct and mineral-driven expression of Sauvignon Blanc.
