Château d'Yquem, in Sauternes, is the benchmark for botrytized sweet wine, blending Semillon and Sauvignon Blanc from meticulously selected, botrytis-affected berries and aging roughly three years in new oak. The 2005 is 80% Sémillon and 20% Sauvignon Blanc.
