Tasting Notes
Sercial is the driest and most piercingly acidic of the classic Madeira styles, prized for its bracing, almost saline intensity, which deepens into something more nutty and concentrated after decades in cask. Reticent at first, it unfurls with aeration to reveal honeycomb, mandarin, Seville orange marmalade and pressed dried flowers.
Pairing Recommendation
Sercial's high acidity and dry character make it a classic match for consommés and nutty, savory dishes such as chestnut soup, or with hard, crumbly cheeses.
