Fèlsina, based in Castelnuovo Berardenga on the southern edge of Chianti Classico, makes its Vin Santo following the ancient tradition of passing the 'mother' — the thick residue of previous vintages — from cask to cask each year. The blend of Trebbiano, Malvasia and a portion of Sangiovese (added to characterize Fèlsina's own style) comes from the Valli and Il Poggiolo vineyards; grapes are hand-picked, dried naturally on mats until January or February, then aged seven years in sealed 100-litre casks in the estate's vinsantaia loft before six months of bottle aging.
