Jacky Blot founded Domaine de la Taille aux Loups in Montlouis-sur-Loire in 1989 and became one of the appellation's defining winemakers before his death in 2023; the estate, now 45 hectares, is run by his son Jean-Philippe. Rémus, made from a plot of old vines (70-80 years) on siliceous-clay soil over limestone bedrock, is hand-harvested in the second pass through the vineyard and fermented with no added yeast or chaptalisation, then aged a year in barrel (one-third new, one-third one-wine, one-third two-wine).
