Domaine Testut has farmed vines in the historic heart of Chablis since 1967, when Philippe Testut founded the estate; his son Cyril took over in 1998 and the family today farms roughly 13 hectares across the appellation. The Vieilles Vignes bottling draws on a 9-hectare block of 50-year-old, massale-selection vines on clay-limestone soil, facing largely southwest toward Grand Cru Blanchot, hand-harvested from mid-September at an average yield of 45 hectoliters per hectare. The wine is vinified in stainless steel following the domaine's own protocol, with a 24-48 hour static settling of the must, then aged a minimum of 9 to 18 months before release.
