Raventos i Blanc is a historic winegrowing estate in Sant Sadurni d'Anoia, Catalonia, farming since 1497 and now a leading voice for terroir-driven sparkling wine outside the Cava DO, under the Conca del Riu Anoia designation. De Nit was created after the 2006 harvest, when Pepe Raventos, seeking to craft an elegant rose, drew inspiration from Billecart-Salmon's rose Champagne. The 2023 vintage is a blend of 49% Xarel-lo, 34% Macabeu, 9% Parellada and 7% Monastrell from organically and biodynamically farmed estate plots -- the white varieties from the deep, calcareous, sand-rich loam of La Barbera, La Plana, El Prat and El Viader, with the Monastrell drawn from the lower terraces of the El Serral hillside for color and structure without losing freshness. The wine undergoes secondary fermentation in bottle with a minimum of 18 months on the lees before disgorgement. It is 12.5% ABV with 4 grams per liter residual sugar, an Extra Brut style.
