Commanderie de Peyrassol sources this rosé from its IGP-classified vineyard around the Coudonnier area, supplemented by fruit from local partnerships. The grapes are destemmed and pneumatically pressed, given a four-hour cold settling, fermented at controlled temperature in stainless steel, and aged a few months on fine lees before light filtration. 12.75% ABV.
Tasting Notes
Pale pink in color with bluish highlights; the nose is expressive with ripe peach layered over a fresh bouquet of white flowers, and the palate opens lively and refreshing with bright citrus and an orange-candy texture, finishing on fine, savory bitters.
