Profile & Story
Celler 9+ farms organically in Tarragona, on the coast of Catalunya, where sea breezes from La Marinada moderate ripening. 1r Escumosos is their sparkling wine, made from Cartoixa and Macabeu: after harvest the grapes are destemmed and pressed, the must rests 24 hours in steel, then ferments 15 days at 14-15 C. Concentrated organic must and yeasts are added at bottling for the second fermentation, which runs a minimum of 15 months on cork -- with no expedition liqueur, sulphites, preservatives or fining agents added at any stage, a true brut nature.
Tasting Notes
An intense and expressive sparkling wine with fine bubbles in a fine, constant bead. Varietal aromas of white flowers and fresh notes -- white peach, fennel, lime -- joined by sweeter nuances from cork ageing: toasted bread, cinnamon, caramel, quince, honey. The palate is wide, structured, fresh and driven by citrus nerve, with dried fruit and a long aftertaste on the finish.
