Cantina Valle Isarco, or Kellerei Eisacktal, is the growers' cooperative winery of the Valle Isarco, the northernmost wine-growing valley of Alto Adige, specializing in aromatic mountain white wines. The grapes for this Sauvignon come from Campodazzo, a small winemaking village in the southern part of the valley at 600-720m elevation, on hot, fertile, deep alluvial soils with porphyritic sediment. The grapes are picked exclusively by hand; after a short period of skin contact and delicate crushing, the wine undergoes controlled-temperature fermentation and 10 months of aging on the fine lees, partly in stainless steel and partly in large wood barrels.
