Profile & Story

Bugno Martino is a small organic and biodynamic winery run by Giuseppe and Raffaella in San Benedetto Po, in the Oltrepò Mantovano near Mantua, on soils of silt, clay and sand, with vines planted at a density of 3,500 plants per hectare. Rosso Matilde takes its name from the medieval countess Matilda of Canossa. It is a Lambrusco Mantovano blend of Lambrusco Salamino and Ancellotta, hand-harvested in the third week of September. The must macerates on the skins for twelve days with indigenous yeasts before a Charmat-method second fermentation with four months in autoclave, finishing at 12% alcohol with 11 g/l residual sugar.

Tasting Notes

Ruby red with a persistent, fruity bouquet of violet and cherry. The palate is round and full, leaning soft, with a sensation of fresh fruitiness.

Pairing Recommendation

Suggested with pumpkin tortelli, risotto, white meats, roasts, and boards of cured meats and cheese.
