Domaine de la Pépière farms this cuvee from a twelve-hectare, notably stony hillside parcel above the Maine, on granitic subsoil shared with the Clisson and Château-Thébaud crus, from vines averaging 25 years old. The vineyard is worked organically and biodynamically, using only sulfur, copper and plant-based treatments, with no synthetic herbicides. Grapes are hand-harvested and pressed gently by gravity without crushing; natural yeasts already present on the fruit induce fermentation, and the wine rests on its lees for three months without racking. Mis Précoce is an early-bottled selection of this same cuvee, released after only a few months on the lees rather than the domaine's standard aging.

Recommended as an aperitif or with shellfish and other seafood, served at 12-14 degrees C.
