Platinetti Guido farms in the Alto Piemonte, near Ghemme, guided by a minimalist philosophy built on generations of experience: careful vineyard management reduces the need for cellar intervention, with time for aging left to do the rest. Their Colline Novaresi Vespolina is picked first among the estate's varieties, ferments with skin contact for up to five days in steel, then ages a minimum of six months in steel tanks followed by at least four more months in bottle.
