Profile & Story

González Byass was founded in Jerez de la Frontera in 1835 and remains one of Sherry country's leading family-owned houses. Tío Pepe, their flagship Fino, was the first wine ever registered as a trademark in Spain and today is the world's best-selling Fino, sold in more than 100 markets. It is made from 100% Palomino Fino grapes grown in the albariza chalk soils around Jerez, then aged for an average of four to five years under flor - the layer of native yeast that forms on the wine in cask, protecting it from oxidation and giving Fino sherry its pale color and distinctive freshness.

Tasting Notes

González Byass's Fino house style is bone-dry and pale, with a saline, mineral edge and aromas of almond, chamomile and freshly baked bread developed under flor; the palate is dry, savory and complex, finishing long and refreshing.

Pairing Recommendation

Traditionally served chilled as an aperitif, its versatility also makes it a natural match for tapas and a wide range of dishes, from casual bites to more refined cuisine.
