Raventós i Blanc has been a family estate since 1497, and it was here in 1872 that the first Catalan sparkling wine made by the traditional method was produced. A pioneer of sustainable viticulture in the region, the estate has been certified organic since 2009 and biodynamic (Demeter) since 2013, and in 2012 the family left the Cava appellation to found their own, more strictly defined designation, Conca del Riu Anoia. This Blanc de Blancs comes from Vinya del Llac, a north-facing vineyard whose clay soils over calcareous bedrock limit the vines' water reserve and give the grapes extra structure. The blend is 50% Xarel·lo, 35% Macabeu, 10% Parellada and 5% recovered Malvasia de Sitges, harvested by gravity-led reception and slow, low-pressure pressing, then given a second fermentation in the bottle with a minimum of 18 months' aging on the lees.
