'Kafana Red' is a house cuvee made for the restaurant by Kairos Vina, a family-owned, organic and dry-farmed winery in the hills above Trogir in central Dalmatia, Croatia, where the wines are made with native yeasts and minimal sulfur. It is built on Babic, the signature red grape of the Sibenik and Primosten coast of North Dalmatia, known for structured, savory reds from sun-baked, seaside limestone terraces.
