Movia, in Dobrovo in the Brda hills on the Slovenia-Italy border, is led by winemaker Ales Kristancic, renowned for his commitment to organic and biodynamic farming and his inventive approach; the estate grows Rebula, Pinot Grigio, Sauvignon Blanc, Chardonnay, Merlot and Pinot Noir without herbicides, pesticides or fungicides. This Pet-Nat is made by the methode ancestrale, a single fermentation with bottling before the sugars have fully converted, so the bubbles form naturally. It is a 50/50 blend of Rebula and Chardonnay: the Rebula, given about 24 hours of skin contact, is co-fermented with the Chardonnay using only wild yeasts.
