In 1998 Marinko Rodica, a car mechanic by trade, changed course to become a winemaker; by 2008 the family estate at Truske, in the hills above Koper in Slovenian Istria, farmed some sixty thousand vines and was certified organic. This dry 'col fondo' sparkling is made from 100% Refosk grown on terraced, south-facing limestone slopes about 5 km from the Adriatic. The hand-harvested grapes see a short one-hour maceration, ferment naturally and age 12 months in stainless steel; a saignee of unfermented Refosk from the following harvest starts a second fermentation in bottle under crown cap, and the wine is left undisgorged on its lees, hence the fine 'col fondo' sediment. 12% alcohol.

Pairing Recommendation

Serve cold as an aperitif, with charcuterie, young cheeses, or a not-too-sweet dessert such as panna cotta or strawberry cheesecake.
