Rojac is an organic grower in Slovenian Istria. This Malvazija (Istrian Malvasia) is made from organically grown grapes with only a minimal addition of sulfur: the cold must is inoculated with must prepared the day before to start a gentle cold fermentation, and the wine is kept unfiltered and cloudy until bottling, then given only a coarse filtration and sealed under screwcap to keep it fresh.
