Conquilla is an estate-grown Cava from the Penedès valley near Barcelona, produced by the traditional method (second fermentation in bottle) from a blend of 50% Xarel-lo, 25% Macabeu and 25% Parellada. The name -- Catalan for "shell" -- refers to the fossiliferous, rocky clay-limestone soils of the estate.
