Shvo Vineyards is an estate winery founded in 2007 by winemaker Gaby Sadan in Jish (Gush Halav), on the western edge of the Upper Galilee, at 800m altitude in a natural oak grove overlooking Mt. Meron. The vineyard's gravelly flint (silex) clay soil is unusual for the region. This 100% Sauvignon Blanc is hand harvested, whole-cluster pressed, naturally fermented in oak, and aged 6 months on lees in neutral French barrels.
