Ameztoi represents the fifth generation of the Ameztoi family producing txakolina in Getaria, on the Basque coast. Led by Ignacio Ameztoi -- widely regarded as a txakoli innovator -- the estate farms twenty hectares of Hondarrabi Zuri on dramatic seaside cliff vineyards facing the Bay of Biscay. The base Getariako Txakolina is fermented in refrigerated stainless steel tanks using indigenous vineyard yeasts; the tanks are kept sealed and chilled near 32°F before bottling to preserve the wine's natural carbonation, giving it a delicate effervescence and signature mousse that cannot be replicated by force-carbonation.
