Domaine Bony Gachot is a small, women-run estate ('Viticultrices en Bourgogne') based in Nuits-Saint-Georges, run by Fabienne and Eva. Their Les Chaillots bottling comes from a parcel of about 0.90 hectares of Pinot Noir with vines around 50 years old; the name Chaillots refers to the stony ground of the site in local dialect. Vinification includes a cold pre-fermentation maceration in open vat, with pigeage and remontage adjusted by taste, followed by barrel aging with about 20% new oak.
Tasting Notes
A fine, elegant and full-bodied wine, best drunk within 5 to 7 years; the domaine suggests serving it around 14C when young and closer to 16C once it has matured.
