Vittorio Capovilla, licensed as a distiller since 1988 and based in Rosa (VI), Italy, is regarded as one of Italy's finest craft grappa producers. For this bottling he partnered with Josko Gravner, the natural-wine pioneer known for amphora-aged Ribolla Gialla, distilling the pomace from Gravner's Ribolla Gialla after it was left to ferment and macerate in buried amphorae for five to six months. The grappa is double-distilled in small copper stills using a bain-marie system, rested in stainless steel for as long as needed, and diluted with spring water from the Monte Grappa massif to a finished strength of 52% ABV.
Tasting Notes
Fruity and herbaceous with light citrus notes; soft and enveloping on the palate, warm and persistent, with a slightly citrus aftertaste.
