Profile & Story

Charlevoyou is produced by Famille Migneron de Charlevoix, a cheesemaking family in Baie-Saint-Paul, Quebec, who became the first Canadian cheese dairy to distill the petit-lait (whey) left over from their own cheese production. Their process took five years to develop; they have distilled grape marc since 2016 and whey since 2017, and began commercializing this eau-de-vie in 2020, embodying a circular-economy approach that turns a cheesemaking byproduct into spirit. It is bottled at 40% ABV and cut with water from their local mountain source.

Tasting Notes

A white spirit with the elegance of vodka but the personality and charm of an eau-de-vie, showing notes of dulce de leche, blueberries and herbaceous honey, with a generous, indulgent texture.

Pairing Recommendation

The producer suggests serving it well chilled on its own, or using it in a Dirty Martini, a Bee's Knees, or an Espresso Martini.
