Lomas de Llahuen is the project of Gustavo Riffo, a Chilean winemaker whose family has farmed vines in Portezuelo, in the Itata Valley, for generations. Gustavo returned to his family's land to champion the traditional "Pipeno" style of the region, working with low-intervention methods and native-yeast fermentations. This bottling is 100% Pais from an organically farmed single parcel called Parmenia, planted with vines roughly 200 years old on granitic clay-loam soil and farmed without irrigation. The grapes are destemmed and macerated on their skins for about two weeks in stainless steel with native yeasts, then pressed and rested in stainless steel for eleven months before being bottled unfined and unfiltered with minimal SO2.
