Profile & Story

Bodega Manuel Aragon is a family winery in Chiclana de la Frontera, Cadiz, within the D.O. Jerez-Xeres-Sherry zone; the estate describes its philosophy simply as 'we only know how to make wine.' The Oloroso Tio Alejandro is named for a beloved longtime client and is made from Palomino Fino grapes aged oxidatively via criaderas y soleras for an average of 17-20 years; 18% ABV.

Tasting Notes

Amber to mahogany in color, with aromas of walnuts, toasted vegetal and balsamic notes, spice, and hints of truffle and leather; powerful, round and full-bodied on the palate with a very elegant, drying finish.

Pairing Recommendation

Recommended with red meats and game, meat stews, gelatinous cuts such as oxtail or cheek, mushrooms, and well-aged cheeses; served at 14-16 degrees C in a white wine glass.
